Believing that water is life and wine makes you sing, we respect the recipes our mums created and give them a bit of a Melbourne twist.

Knowing the rules and breaking some, are all done in good taste. We love to elevate the classics and make them a little extra special.

About

Mark Natoli

Mark is a seasoned restaurateur. Starting his career at Grossi Florentino, he's since opened several popular Italian restaurants. He is currently also a co-owner of Carosello in Moonee ponds.

Jordan Cachia

Jordan worked as a manager in the telco world, before transitioning to hospitality. He has always aspired to open his own restaurant, and opened Carosello in 2016. He loves big walks with his big dog Gus, and spending time with his grandkids.

Hass

Hass is a seasoned hospitality professional with vast experience in managing venues - from fine-dining to busy restaurants & bars. He started his career with the Grossi family and worked for more than a decade in Grossi Florentino. He is passionate about great customer service and serving quality food.

About

Elvis

Elvis is our Head Chef, and has been in hospitality for the past 15 years. Specialising in Italian cuisine, he is also a co-owner of Carosello in Moonee Ponds. If he was made to only ever eat one meal, it would be his signature tiramisu.
